Eggplant Salad with Peppers and Mint

Summer grilling season isn't complete without this easy to prepare salad. Packed with flavor, this salad can be used as an entree or a side dish,

Ingredients

  • 4 cups Eggplant , Cut 1" diced
  • 10 fl oz Balsamic Vinaigrette Dressing
  • 2 cups Mixed Bell Peppers, Cut 1"
  • 2 cups Cherry Tomatoes , Halved
  • 2 cups Field Greens
  • 2 cups Farro, Cooked
  • 3 oz Feta
  • 1/2 cup Mint Leaves

Method

  • Preheat oven to 425°F.
  • Toss eggplant with 4 fl oz Balsamic Vinaigrette Dressing, reserving the rest.
  • Bake until tender & golden, about 20 minutes, & then let cool.
  • In a large bowl combine eggplant, peppers, tomatoes, field greens, farro, feta & mint.
  • Toss with remaining Balsamic Vinaigrette Dressing & serve.
